Peach and Gorgonzola Pizza with Spicy Honey

Pizza dough (I used a purchased dough)

Cornmeal for dusting the pan

1 T. olive oil

1 fresh peach - sliced

¼ cup gorgonzola cheese

¼ tsp fresh thyme

5 slices of Prosciutto or Salami

Fresh lemon zest and juice from 1 lemon

Spicy honey (½ c honey with ¼ tsp dried chili flakes stirred in)

Dust a baking pan with cornmeal, stretch a pizza dough disk out to desired thickness. Spread olive oil over the dough, and add the other toppings except the spicy honey.

Remember, the trick to crispy pizza is less is more!

If you’re lucky enough to be using a pizza oven bake it 3-4 minutes. If grilling it will take about 12 minutes or so and same in a 400 degree oven. Turning about halfway through no matter which oven you’re using. Drizzle with spicy honey and cut in quarters to enjoy!
